Delicious Strawberry Bavarois On Sponge Cake .. For Kids

Ingredients:

For the genoise sponge cake:

4 eggs
120 g of sugar
120 g flour
Pinch of salt


For the Bavarois:

600 g strawberries
1 lemon juice
6 sheets of gelatin
50 cl of heavy cream (very cold)
220 g of sugar


For the topping:

5cl of coulis (strawberry or raspberry)
2 sheets of gelatin

Method:

For sponge cake:

First we need  Circle Cookie Cutter with high edge, a baking try and  parchment paper sheets.

Preheat the oven to 400 °F (200°C).
In a medium bowl mix well together: 4 eggs yolks and sugar and salt for 5 min or until the mixture whitens.

Add the flour to the mixture and mix well.

In a medium bowl beat the eggs whites.

Add the eggs whites gentely to the batter.

Spread the batter in a circle cookie cutter on a baking try covered with a parchement paper sheets and bake it  for 10 to 12 minuttes.

When the sponge cake is cooked, slip it on a cake plate and remove the parchement paper sheets by leaving the cake in the circle cookie cutter.

For Bavarois:

In a blender mix together strawberries, lemon juice and sugar.
In a small bowl of water, soften the 6 sheets of gelatin for 10 min, then drain them.

On a medium heat, pour the mixture of strawberries into a saucepan and add the drained 6 sheets of gelatine.
Stir well until the mixture are melted. And leave the mixture to cool.

whip well the heavy cream.

Add the whipped cream gentely to the cold mixture of strawberries.

Pour the mixture on the sponge cake into the circle  cookie cutter and refrigerate for 8-10 hours.

After 8 hours pass the blade of the knife over the edge of the circle cookie cuuter to unmold.

For the topping:

In a small bowl of water, soften the 2 sheets of gelatin for 10 min, then drain them.

On a medium heat, pour the strawberry coulis into a saucepain and add the gelatin sheets mix well and let cool.
Then top the bavarois with the topping and let cool in the refrigerate for 5 min.

It's ready !! Enjooy!
